Like all Mediterranean countries, Italy’s foodies know how to graze in style. For them to eat properly rarely entails fine dining and meals universally materialise without grandeur or pretension. They are confident in their culinary skill and know that the best seasonal ingredients need little gilding to be consumed at their best.

Glyn Williams indulges over a long lazy continental lunch at Hitchcock’s in Sudbury. Cinzia Ghignoni is a rare breed of chef, impassioned about real slow food and driven by the flavours and textures of what’s fresh and in season. But as Paddy Burt the Daily Telegraph’s esteemed travel writer pointed out, ‘Sutton Gault in Fen country is a village so tiny they forgot to put it on the map’.

Glyn Williams meets celebrated chef Anton Edelmann at his new restaurant Anton’s close to Stansted Airport in North Essex. One would have thought after a long very successful career as Executive Chef de Cuisine at the famous Savoy Hotel on the Strand in charge of a 75 strong brigade of chefs that Anton would want to take it easy.
